Garlic Roasted Squash

I do love garden vegetables, esp. squash. But, my ability to fix them was limited to sauteed in stir-fry or fried in oil. So, I went searching and found this extremely simple and quick recipe.

You simply need: 2 summer squash
1/4 cup olive oil
3 cloves garlic, minced


Preheat oven to 450 degrees F.

Trim the ends from the squash, then cut each squash into halves lengthwise. Cut the halves in half again and again until you make 16 short spears.
I had more than 2 squash seeing as how I feed a family of 8!!!!

Mix the olive oil and garlic together in a bowl. Then toss the squash in the bowl to coat.
Place the squash in a shallow baking dish. Sprinkle with salt and black pepper.

Roast the squash until the spears and garlic start to brown, 5-10 minutes. My oven is very hot and only took the 5 minutes. Check your squash after 5 minutes and add 2-3 minute intervals to avoid burning.
The finished product!! YUMMY!!!! My children even liked it and they are not big fans of squash!!
