Strawberry and Cream Cheese Toaster Pastries

It's officially spring.  I wish the weather would have gotten that memo.  While last weekend was beautiful spring weather (while I had to work, of course),  this week has not been so cooperative.

With spring on my mind,  I think STRAWBERRIES!!!  I love ANYTHING strawberry.  One of my favorite breakfasts growing up were Toaster Strudels, the strawberry n cream cheese ones.  They were sooooooo good!!  So,  I thought I'd try my hand at making my own.  I checked out a recipe online and made a couple modifications to suit my taste.

Here's what you need:
        1 box Frozen Puff Pastry Sheets
        4 oz Cream Cheese
        4 TBSP Powdered Sugar
        1 pint of Strawberries cut into bite size pieces (or you could use strawberry jam)
        1 egg, beaten

Preheat oven to 400 degrees.  Cut the pastry sheet down the line folds into three rectangles per sheet. Mix the cream cheese and powdered sugar together then spread it on half of the rectangles leaving about 1/4 inch on the edge.  Then place some strawberries on top.
Not my best work,  but you get the idea.  This was my first try and also when I learned to spread out the cream cheese.

Now,  fold the half over and using a fork, press around the edges to seal the pastries.  
Take your fork and poke some holes in the top to vent them.  Brush the tops with the egg to get a nice golden brown.  

Place in the oven and bake for 15-20 minutes (depending on your oven).  I would watch them carefully your first try.  I had some of the yummy juices leak out the sides:(

While they are baking,  you can make the glaze.  Combine 1 oz cream cheese, 1/2 cup powdered sugar, and 1 tsp of milk in a bowl, whisk together adding powdered sugar or milk until you get the consistency you like.  Put your glaze in a sandwich bag and snip a corner off to pipe onto the warm pastry.  

   Again,  DELICIOUS!!!!

Menu Plan Monday March 18, 2013

We're gearing up for another busy week.  In addition to Cross Fit and Spring Training for football,  we have doctor appointments and Mini-Me starts her speech therapy this week. Oh,  I almost forgot some additional work in-services.

This is why I have found planning my menu takes some stress off of me.  If I didn't plan things out,  we simply wouldn't be eating and that would make  hubby very upset.

So, let's get started.

MONDAY - Baked Chicken, sweet potatoes, glazed carrots

TUESDAY - Ravioli and garlic bread

WEDNESDAY - BBQ pork chops, fried taters, mac n cheese


THURSDAY - Baked Spaghetti, homemade bread

FRIDAY - Tacos, chips n salsa

SATURDAY - Grilled Burgers, french fries

SUNDAY - Lasagna, homemade bread

Menu Plan Monday - March 11, 2013

Let the chaos begin!!  This week starts spring training for football.  That means hubby and the boys will be on the run almost every night of the week, for the next three months.  Our schedule will look something like this:

         Monday/Friday - Crossfit Training
         Tuesday/Thursday - Football Training
         Wednesday/Sunday - Church

That just leaves Saturday evening.  Whatever will we do with that night??  I'm sure some things will come up.

All that means I have to do much better planning. Last week was a bust since I didn't have Monday off to sit down and plan out the week.  I felt behind and out of sorts  all week.  Hubby wasn't really thrilled when he would ask what's for supper and I didn't know!!

Also,  because of their workouts in the evenings,  we will be having our big meal (supper) at lunch time.  That way,  they won't have full stomachs and get sick while they're exercising.  Then,  we'll have a smaller meal in the evening.

So,  on to the plan:

     MONDAY - Baked chicken, mashed potatoes/gravy, carrots, corn, and rolls

     TUESDAY - Oven Baked Chicken Faijitas
                        rice            

     










      WEDNESDAY - Crock Pot BBQ Chicken Legs, Roasted Potatoes, Baked Beans, Corn Bread

      THURSDAY - Spaghetti and Meatballs, Garlic Bread

      FRIDAY - Homemade Pizza

      SATURDAY - Grilled Hamburgers, French Fries, Green Beans

      SUNDAY - Crock Pot Roast, Potatoes, Carrots, and Homemade Bread

Cell Phone Catastrophe

Admit it,  we're all attached to our cell phones.  While I would like to say it's just to have in case of emergency,  I would be lying!!!  I use my phone to check facebook,  look up phone numbers,  get me directions, etc., etc.  Yes,  I'm attached.  So,  when this happened:
 I was a bit upset.  First of all,  when I dropped the poor thing, for the 500th time probably, I was actually trying to put it up safely so I wouldn't knock it off of the counter (FAIL).  Second,  it was a full two months before my upgrade!!!

 So,  I did what any creative,  practical person would do,  I used some tape and held it together for a couple days until the new screen I ordered arrived.  Then,  I proceeded to do some electrical gadget surgery.  How hard could it be anyway?  I mean,  I changed the screen in my laptop once,  I could do this, RIGHT???



Looks pretty good, huh?  Well,  looks can be deceiving!!  I WAS very proud of myself.  I took it apart and put it back together all by myself (with the help of You-Tube).  I proceeded to send texts,  get on the web browser and all sorts of wonderful things and I thought I had won.  THEN, I made an actual phone call!  Here's the best part,  I could hear them,  but they couldn't hear me (hubby said it was the best phone I ever had, LOL).

Now,  I am upset.  Two months with a phone that doesn't actually work as a phone.  At this point,  it functioned more like an ipod!! UGH!!!

Hubby to the rescue!!  He spent the better part of an afternoon on the phone with our cell carrier and convinced them to change my upgrade date (if they valued us as customers) and then went and purchased a Samsung Galaxy S3 for me.  How awesome is that??  He's so sweet,  I think I'll keep him.

Now,  to get a serious case for this phone.  If I drop and break this one,  hubby will NOT be happy!!!
