I've got a lot of simple recipes planned for this week as I am trying to get Pappy to eat healthier and find a few things he might be comfortable fixing on his own. We're going to be spending a lot of time in the kitchen. He's doing pretty good (all things considered), but needs some help with foods that are better for his blood sugar and heart. We're also going to try a couple new recipes I found for breakfast foods: sausage mini quiche, apple-cinnamon baked oatmeal, and a blueberry crumb coffee cake. I'll be sharing those with you in the next couple weeks.
So, here's the plan:
MONDAY - Spaghetti and meatballs (this was a request from Mini-Me since she was sick when we had it last)
TUESDAY - Meatloaf, mashed potatoes, glazed carrots, green beans
WEDNESDAY - Grilled BBQ pork tenderloin, grilled pineapple, grilled sweet potatoes, baked beans
THURSDAY - Grilled chicken, grilled squash and zucchini, pasta salad
FRIDAY - Grilled salmon, rice
SATURDAY - Baked chicken, mashed potatoes/gravy, green beans, corn, rolls
SUNDAY - Crock Pot roast, potatoes and carrots.
