My girls were wanting chocolate for breakfast, so chocolate chip muffins are pretty close right? Turns out I didn't have enough chocolate chips, so we improvised and ended up with some delicious muffins. Here's all you need:
3 c. flour
1 c. sugar
1 1/2 T baking powder
1/2 tsp salt
1 1/2 c chocolate and peanut butter chips
1/2 c. butter, melted and cooled
1/4 c vegetable oil
3 eggs
1 1/2 c milk
2 tsp vanilla
Preheat oven to 375 degrees and prepare two muffin pans. This recipe will make in between 1 1/2 - 2 dozen regular size muffins.
Combine the flour, sugar, baking powder, and salt. Whisk together until well mixed. Then, stir in the peanut butter and chocolate chips.
In another bowl, combine the butter, vegetable oil, eggs, milk and vanilla. Mix well, then add to the flour mixture. Mix together until moist. Fill the muffin tins and bake for 15-18 minutes. Using the toothpick test, when the toothpick comes out clean, they are done! Let cool and enjoy.
