I'm going to be honest here. I am NOT a morning person. I should be. I'm a mommy of 6 and should be up at the crack of dawn, right? Well, I am a sleeper. I LOVE MY SLEEP!!! I usually do not get into bed before 11, so I prefer to stay in bed in the morning. Of course hubby would prefer I get up and make him breakfast before he heads to work, BUT..........
So, when these little yogurt/oatmeal jars started popping up on my facebook feed, hubby and I thought we would give them a try. I can fix them the night before and he has a healthy breakfast before heading into work. PLUS, I get to stay in the bed a bit longer. I checked the internet and found a couple different sites with recipes. Like all recipes, you can customize them to your likes and dislikes. You can do just oats and milk as your base; oats, milk, and plain yogurt; oats, milk, and greek yogurt; or oats, milk, and flavored yogurt. The options are pretty much endless.
We started with oats, milk, and plain yogurt as the base this time, but I think I'll try flavored yogurts next. Hubby said while it's not his favorite breakfast, he will eat them a couple mornings and I'll STAY IN BED!!! SCORE!!!
Here's what you need:
Half pint jar
1/4 cup rolled oats
1/4 cup whole milk
1/4 cup yogurt
1 tsp chia seeds
1 tsp honey or maple syrup*
1/4 cup fruit mixture of your choice*
*The honey or maple syrup is your sweetener. You can choose which you use based on what else you plan to put in the base mixture. For example, I used maple syrup with blueberries and the apple/cinnamon ones, but honey with the strawberry/banana mix. It's up to you.
*The fruit mixture can be whatever you like; peaches and pecans, raspberries and vanilla, pineapple and coconut, banana and peanut butter, etc. Again, the choices are endless. For our first batch, we used blueberries and maple syrup; applesauce(1/4 cup) and cinnamon(1 tsp); and strawberries and bananas.
It's an easy breakfast for kiddos and the hubby without a lot of prep time, or a healthy afternoon snack. I like it!!

Menu Plan Monday March 10, 2014
It's here! The week of surgery is upon me, and I'm NOT ready. Well, I'm ready for the surgery! However, all the projects I had wanted to get finished before I go under the scalpel will just have to wait a while. I really thought I could get it all finished, just a little disappointed. Once again proves to me, I sometimes put too many things on my plate; schooling, working, laundry, cooking, cleaning, and home improvement projects. How do you all do it? I just can't seem to get it all done!
Enough with the pity party - life will go on as usual whether I got all the rooms painted and furniture moved or not!!
So, on to this week's plan. It's time to get things cleaned up, fixed up, and put away. My sister-in-law will be coming up tomorrow to help with the last minute things and to watch the kiddos while I am in the hospital and a few days after so I can rest and recover. Then, we're going to play it by ear and see how I feel. She has offered to stay longer if we need her. I am so thankful she's willing to come and put up with my crew.

TUESDAY - taco night
THURSDAY - SURGERY DAY - Sister-in-law is in charge from here on this week.
FRIDAY - SUNDAY - I'm leaving this up to her. Once she gets here, we'll head to the grocery store and get what she needs to feed the crew.

Menu Plan Monday February 24, 2014
The last week of February already? The older I get, the faster time goes!
This week I will be starting some spring cleaning projects, as I will be having surgery the second week of March. So, for 6 weeks I won't be able to lift anything heavy. That really limits what you can do as far as cleaning around the house. So, I hope to get a few things done in the next couple of weeks to get a head start. My goal is to get some organization in this mess and to have the house looking decent so when people come over I won't be mortified!!! My sister-in-law is nice enough to come for a few days during and after the surgery to manage the kiddos, but they will be on their own housework wise for a couple weeks after that.
With all the projects I have in mind this week, the menu will be quick and easy.
MONDAY - grilled salmon and rice
TUESDAY - baked chicken, mashed potatoes, green beans, homemade bread
WEDNESDAY - hamburgers, mac n cheese, peas
THURSDAY - BBQ chicken and roasted potatoes
FRIDAY - pizza
SATURDAY - ham n cheese sliders, fruit salad, chips
SUNDAY - Out to eat for hubby and kiddos (I have to work)

Disney 2014 Pics
I shared a few pics from our vacation off my phone here on my Menu Plan Monday last week. I have more though. Keep in mind, these are just some of the MANY pictures I take. Hubby gets a little frustrated. Even though it wasn't our first time at Disney, I still stopped to get kids pics with characters, as well as many of the same pics of parades, rides, and surroundings. Buy hey, the last time we went, we didn't have Baby Samuel! That means all of these things were new to him and he just LOVED it ALL!!! Well, not the haunted mansion (yes, we took him on there), but everything else :-)

Menu Plan Monday February 17, 2014
I was blessed enough to spend the last 2 weeks in sunny Florida with my family, visiting Mickey and Minnie Mouse (pics to follow). I did a little cooking while we were there, but not near what I thought I would have to do. Taking 8 people to Disney World requires us to stay on a tight budget. Fortunately, a couple expenses we anticipated didn't happen and we had more money to spend on food. That means all I cooked was spaghetti and meatballs in the crock pot, chicken/green beans/potatoes, ravioli, and we always fixed breakfast at the condo.
However, my spoiling is over now! It's time to get out of vacation mode and back into chief cook mode.
So, here's the menu for this week:
MONDAY - potato soup
TUESDAY - homemade pizza
WEDNESDAY - slow cooker beef and broccoli

Menu Plan Week of January 20, 2014
Better late than never, I often say. I had my menu planned, just not a computer to be able to post it on my blog. Our laptop is on it's last leg, I believe. Put it's temperamental attitude together with my 6 kiddos and I can't get on here very often at all. But, on a brighter note, it's working this morning!!
So, after a busy November/December, it slowed down for a week or two and now we're back at busy, busy, busy. It's a good busy though, we are heading to Disney World in less than 2 weeks. YAY!!! What that means is on top of the normal homeschooling, cooking, cleaning, and working I will add more laundry and packing up 8 people!! I do a little bit every day so that I don't have to stay up the night before doing it ALL!!! I have already packed up the swim wear; the pools are heated were we stay and we often spend an evening or two relaxing in the pools and hot-tubs. I have also already pulled out socks and underwear for the girls (yes, they have that many undies and socks). This year, I'm trying a different packing system I saw somewhere online. I'll share that later, depending on how it all works out :)
On to the menu:
MONDAY - we had fried pork chops, green beans, applesauce, and crescent rolls
TUESDAY - we had chicken gravy biscuits, mashed potatoes, corn, and cooked carrots
WEDNESDAY - ham, mac n cheese, roasted potatoes, corn bread
THURSDAY - taco night
FRIDAY - If it's not Truth for Youth at church, we'll have homemade pizza
SATURDAY - Breakfast for dinner - waffles, eggs, bacon, and fried taters
SUNDAY - Roast, potatoes, and carrots

Menu Plan Monday January 13, 2014
I have enjoyed time away with family and church family over the holidays. However, it's time to get back to school, chores, and routines. It's time to get back in the kitchen, school room, and laundry room :( I can't even tell you how wonderful it was to be away for just a few days in the hotel with church family - no laundry to do (though I did have to when we got back), no food to prepare, or kitchen to clean up. IT WAS GLORIOUS!!!!
Now, we're counting down until our Disney trip...................... Every time we are getting shoes on, my youngest asks, "we going to Disney World now?" I love how excited the kiddos get. We stay in a fully equipped condo, so I will still be fixing a few meals. Disney for a family of 8 isn't cheap, so we cut some costs where we can. One thing we do is keep our eating out to a minimum. I will be taking my crock pot!! It's still a great time away with our little family. I CAN'T WAIT!!!!!
On to this weeks plan, dreams of Disney must wait:
MONDAY - Potato soup and cheesy biscuits
TUESDAY - Steak n gravy, mashed potatoes, green beans, corn, bread
WEDNESDAY - Whole chicken in a crock pot, roasted potatoes, cooked carrots
